From Virginia to Maine....



Killer tomatoes have arrived and may take over the world. Mine showed up with new pickles and dry beans. Yippee!










Emily has had the same problem with tomatoes. They are everywhere!!!











She turned her tomatoes into this lovely dish.











She also made a tomato pie! Em, I want the recipe for this square pie.
Here is what I'm making with my tomatoes this weekend:
Chicken and Bean Stew:
-2 tablespoons olive oil
-4 boneless skinless chicken breats cut in small pieces
-1 large onion chopped
-2-3 cloves garlic minced
-1/2 green pepper chopped
-1/2 yellow or red pepper chopped
-bunch of killer tomatoes chopped or one 28-once can stewed tomatoes
-1 15 ounce can cooked pinto beans, drained and rinsed
-3/4 cup medium heat salsa
-1 talbesppon ground cumin
-1 tablespoon hili powder
-salt and pepper to taste
Heat the oil and add the chicken, onion, garlic, and peppers and cook until chicken is done. Add tomatoes, beans, salsa, and seasonings, and cook at a simmer all together for at least an hour. Serve with sour cream and grated jack cheese.
